Cheers from a Chilly Place

Oh hey! 

So I am well aware that my blog needs a complete revamping process.  Like, pronto.  Only thing holding me back?
1. Lack of creativity
2. Lack of time
3. (Sometimes) Lack of interest. 
The third reason is quickly diminishing as increasingly more creative ideas fill my head. 

Only time will tell where this blog and my other more subject-specific blog, Confessions of a Health-Queen will take me.  They are probably just for my enjoyment, more than anything.  I view this one as kind of like an online journal for me to update on my life, and the current things I'm interested in.  My food blog has, so far, been a place for me to post about recipes that I have tried and loved. (Yes, I love to cook)

Anyway.  Here's a [relevant] picture for the day.  Just before cheering at the BYU basketball home-opener against Fresno State (yes we won!) with my gorgeous friend, Jeniel!

But, actually if you consider the state of Utah at this point, this is very relevant.  Snow has not yet filled the ground, luckily!

if you don't know me very well, you are probably not aware that i adore music.  It's true.  I grew up playing the piano- taking lessons, performing, etc. for 13 or so years.  I think that helped my broad sense of music taste develop.  I listen to and like almost every genre of music.

Sunshine and New Beginnings

Well, it seems like the time would never come when I would be back in Arizona for the summer, but here I am- almost halfway through it before I head up back to Winter Wonderland, a.k.a. Utah!

Don't ask me why, but for some reason I found almost EVERYTHING to do in this first month and a half other than blog.  It's not that I didn't want to, I guess I just didn't know what to blog about.  Believe me, my life has never been so boring and uneventful (okay so maybe uneventful isn't exactly the right word) than it has been since I've been in Mesa.  In Utah, my life was never-ending to-do list of classes, chores, practices, workouts, grocery shopping, laundry, studying, church, and the occasional social life attempt (HA), tv-show viewing, and frozen-yogurt run.  Yes, I was a nerd.

Now that I am home, I've probably done as many productive things in a month that I could do in a week while I was at school.  No joke.  These are some of the things I have I have been working (???) on/doing...

1. Being with some of my bestie friends


Katie, Raquel, Diane, Nikki & I all went to dinner at El Charro- a delicious Mexican restaurant in downtown Mesa when I first got home! It was so fun and afterwards we went to Lauren Randall Ashby, a good friend from high school's, wedding reception! I love these girls and love hanging out with them!

2.  Saw my cousin, Kierstie Foster (Larsen) get married

This was such a sweet, exciting day in which Kierstie, my cousin and friend for my entire life, was sealed for time and all eternity to her sweetheart, Steve Larsen in the Mesa temple!  I just love seeing couples come out of the temple, hand in hand, enormous smiles stretching across their faces.  I think forward to that moment in my life!  

3.  Have been cooking- a LOT!

So since I got home, I've had a TON of free time.  At first, it was great.  I'd wake up, go to the gym to get a nice and sweaty workout in, then immediately jump in the pool when I got home, lay out for an hour or so while reading a book, and just continue on the day doing whatever I felt like doing.  Well, let me tell you- that quickly and understandably got OLLLLLDDD!!  Well, I've always had a passion for cooking, but since I realized that I'd have a lot of time on my hands, I realized I wanted to learn how to expand my cooking skills and learn how to make a variety of different yummy things.

Some things have been healthy, others not so much, but I have learned a great deal about the science of cooking! I've even become a fan of the Food Network on tv (haha) and have incorporated a lot of what I learned and what I already know into a nutrition/cooking blog that I am going to do a lot better at updating.  

Some of my favorite things I've whipped up are- Turkey Enchilada Casserole, Tomato, Basil & Ham Lasagna, Oatmeal Honey Apple Cake, Black Bean & Chicken Chilaquiles, BBQ Shredded Chicken, Almond-Streusel Cherry Cheesecake Bars, Ham & Potato soup, Key Lime Bars, and Orange Creamsicle Pie!  I just think it's so fun to make something out of ordinary, plain ingredients that are boring and lifeless on their own, but when combined together in unique ways, create delicious creations of energy-fueling food!

This leads to another big adventure of the summer that I just returned from:

3.  Camp cook at my church's Girl's Camp!

As much as I'd love to cook for 350 people every day just for fun, (??) I volunteered to spend 5 days at Camp LoMia to get much needed hours for the Dietetics program that I am hoping to apply for in February.  In order to apply, applicants must have at least 300 hours of Dietetics-related work and/or volunteer experience.  umm WOW can you say crazy.  Well, any kind of food-prep work clearly counts, and so I thought I could rack up quite a few hours at Girl's Camp.  Let me tell you, the cooks at camp DO NOT EVER HAVE A BREAK.  Period.  We woke up 5:30 every morning to start breakfast, after which we worked on lunch and dinner throughout the rest of the day, and if we had any extra time, we spent that time getting a head start on the next days' meals. 

 It was exhausting!  My feet ached every day and my shoulder literally got sore from all of the monotonous fruit chopping, potato washing, and batter stirring.  But I must say, I worked with some awesome people in my stake who, even though they were a little bit older than I am, I got to know pretty well and become friends with.  And, since I love to cook, it wasn't such a terrible job...  :)

4.  I am a volunteer at Springdale West and Grand Court assisted living communities!

This probably seems very random, but again with the Dietetics hours, I'm trying to get as many as I can this summer before school and cheer takes me away from this glorious free time that I have  I have already been a few times to help out at both of these great assisted living centers- since Dietitians are often employed at these kinds of facilities, this kind of volunteer work counts quite nicely :). 
At Springdale, I work with adults who have dementia.  It is a very humbling, humorous, and life-giving experience.  More details later.  At Grand Court, the residents are more mobile and I have active conversations with them.  I haven't done a ton of work there yet, but I will possibly be doing such things as leading exercise classes and other activities for the residents!  I find it pretty fun and have a lot of respect and fascination for the elderly, so this is a great opportunity for me!

Well that's about it for now.  I love my life and everything in it.  I am so blessed.  I often think about all the things that I have been given and all the opportunities that I have had and think- why me? I don't deserve all this.  All I know is that where much is given, much is required (D&C 82:10!) and I have a great responsibility to give and serve others all I can.  It feels so great to know that you have made a difference in someone else's life, even if it's as seemingly insignificant as smiling at someone you hardly know.  Don't you think?

Oh the places my mind goes...

So, a lot of things have been on my mind, lately.

#1: FIRST of all, the Provo weather.  I think it is has a little psychological disease, known as bipolar disorder!!!!?  One day the weather will be absolutely gorgeous- okay like 50 degrees is considered freezing where I'm from (MESA), I can definitely say that I've been acclimatized and now I think that 45 degrees and windy is the most beautiful weather ever!  But okay, so today, however, it randomly snowed?!??

Whatever.  Can't wait to get back to beautiful ARIZONAAAA.  I love you.  I miss you.  Come back to me.  Five weeks.


#2:  Well, in my geography class we have been talking about lots of countries lately that are VERY undeveloped.  We watched a movie about poverty in India, Africa, and the Philippines. And the other week, we watched a movie about the ridiculous population growth problems in Asia. It made me so sad, but most of all, which is kind of random I got a strong impression and feeling that I want to adopt a Chinese baby girl someday! And perhaps an African baby boy.

Nonetheless, all of this made me very excited to be a mom someday :)




#3:  I realized how intricate our bodies are.
In my biochemistry class, we have lately been learning about glycolysis, the citric acid cycle and the electron transport chain:

terms like "phosphoenol pyruvate carboxy kinase" and "gluconeogenesis" are the everyday lingo that my professor,Dr. Wood, has brainwashed us with.  But, these terms have all stewed in my head for a few days, and I have come to the conclusion that our bodies are amazing- everything from the air we breathe to the muscles that get sore after we have been sprinting all-out for a minute all have a purpose and explanation and its so FaScInAtInG to me!

That's it for now, I'm so excited that it's finally the weekend! This week was my LAST full week of the semester! I can't believe how fast it's gone.

Um hi!


Alright so its been a while, okay A LONG TIME since I have blogged! My bad.



^My family came up to visit me in good ol' Utah in February. They came to watch me cheer at a basketball game, since none of them had been to one yet this season. Basketball games are FUNNNN!! :)

Let me tell you.. I have been busy as a bee this last month or so.



Yes, this might as well be a picture of me^^ I have had SO much homework, midterms, assignments, essays and incessant studying. But..... the GOOD thing is that there are only 4, FOUR, weeks of school left this semester!! I will be end-of-semester-student-studying-finals-week-grading-essays.jpgin my home, sweet, home of Arizona in a little over a month. I cannot believe it.. this semester has flown by, it's ridiculous!!

CHEER:
  • Basketball season was a blast- the games were so much fun with thousands of people in the Mariott Center- us cheerleaders totally fed off of the energy that our AWESOME fans had!!
  • has been the highlight of my freshman year at Brigham Young University-I've made so many great friends and have had incredible awesome experiences that I will always remember
  • Try-outs are coming up at the end of April- yes, we have to try-out again :/ I am kind of nervous, as I will be trying out for the co-ed team, you know where the guys throw the girls up in the air? :) so anyway, I am anxiously anticipating tryouts....
  • I just found out YESTERDAY that I am going to Oklahoma TOMORROW for the NCAA tournament to cheer on our BYU basketball team! We will be gone probably until Tuesday... this is crazy and I am really excited!

Whoops!

Okay so WOW it's been a while. I have to admit I almost considered not continuing this blog.. for some reason I didn't feel like writing anything. EVEN over winter break when I was nothing but lazy. But in all reality, I had the bestttt best winter break ever. And the best Christmas. I realized that when you are away from home, you realize how awesome your family is and how much you previously took for granted how amazing they are. Well I got to spend two weeks and one day with them in PaRaDiSe (aka Arizonaaa my home!) and had the best time ever. We went to dinner several times, played lots of games, went to see movies, did Christmas shopping, baked tons of goodies, had a wonderful Christmas complete with all of our family traditions, played Bocce ball in the backyard, played video games, talked, jumped on the trampoline, sat in the jacuzzi, and created lots of fun memories! I already miss them.
I also had a ton of fun with friends I hadn't seen in a while. It's funny: up here in Utah I feel like I hardly have time to socialize and even when I do have time, sometimes nothing all that exciting happens. But back at home, I hung out with several different groups of friends, went on 3 dates and got to see all the people I love and miss! It was great.

Well now I am back in good ole' Provo, Utah, zip code 84601. Yep, this is the new zipcode of my new apartment. Yes, I moved out of the dorms. Reasons not disclosed. Okay I'll confide... plan and simple, I didn't like the dorms! :) I am way happier here in the University Avenue Condos (or the UAC) with my own room, underground parking, a clean kitchen, more space, etc. For that reason, as well as others :) :) I feel that this will be a fabulous semester. Can't wait! Also, I will make it a new year's resolution to be more diligent in writing on here.

OH and I almost forgot... Happy Birthday to me tomorrow! :) The big 1-9...
